Impossible to Easy is a wonderful book, and so much more than just a collection of recipes. I have never read the introduction to a cookbook before, but I read this one, and I'm glad I did. It is inspirational, almost profound, yet surprisingly warm and friendly. In just a few short pages, I felt a connection with Chef Irvine, and a respect for him, which made me eager to receive all of the instruction that he offers in this volume.
